Braised Beef in Guiness Sauce
Serve 4-6
- 1 lb. beef steak, 1/2" cubes
- 1/4 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon coarse black pepper
- 1/4 teaspoon ground sage
- 1/4 teaspoon thyme
- 1/4 teaspoon rosemary
- 1 large onion, chopped
- 3-4 cloves garlic, diced
- 2-3 Tablespoons olive oil
- 1 12 oz.bottle Guiness
- 2-3 cups vegetable of choice (peas, snow peas, broccoli, etc)
Mix spices in flour, adjust amounts to taste. Toss beef cubes in flour mixture until thoroughly coated, then shake off excess using a wire basket or collander, save excess flour mixture.
Heat oil in heavy skillet, cook onions and garlic in oil until carmelized, keep heat on high and add beef cubes, stirring until browned on all sides.
Add remaining flour mixture and stir until flour browns.
Add vegetables (peas, snow peas, cut green beans, broccoli spears, whatever)
Reduce heat to lowest setting, pour in about half the beer, stirring continuously: add more beer as needed to the consistancy you desire. Cover and remove from heat.
I use a heavy cast iron skillet so it retains its heat and will steam the vegetables.
Serve over rice, potatoes, or noodles.
